Creole Chicken and Sausage - Meal Prep Style! Shredded chicken, andouille sausage, creole seasoning, a rich tomato sauce, veggies, and rice. Cooked in the Instant Pot or slow cooker!  

Instant Pot Creole Chicken and Sausage

chicken breasts

Andouille sausage, sliced

fire roasted crushed tomatoes

tomato paste (optional – it makes it thicker)

green or red bell peppers, chopped

onion,

garlic,

Creole seasoning

salt,

Cook everything together in an Instant Pot for about 8 minutes. (Freezer times listed below.)

Shred chicken directly in the pot. Taste and adjust, and serve over rice topped with anything your fancy lil heart desires!

I made this and added 1/2 cup water even though the recipe didn’t call for it. I still got the burn signal and so I added and addition 1/2 cup water. The flavor was great and I did enjoy the recipe but the chicken was too rubbery for me to make it again.

I was excited to try to recipe, but sadly the dish is flavorless. Also, the chicken wasn’t juicy, which is surprising because I’ve never made “bad” chicken in the instant pot. I followed the recipe to the letter.

This was straight-forward, easy and delicious. Thank you!

this is BRILLIANT! i have several 20somethings in my life who are all about meal prep, and i forwarded this recipe to them! keep 'em coming. i'm going to make it too, and i'm nowhere near 20something!

Made this for supper tonight. Served over fluffy long grain/wild rice - cooked on the stove, not the IP. My wife &amp; I both liked it a lot!  Considering there was no broth, it came out much more moist than I expected but the rice soaked up the excess liquid. Added some crushed red pepper flakes because we like a little more spice. Garnish with shredded cheese, jalapeño slices, and sour cream.  Yum!

Can't believe that this is such an easy-to-make dish. It looks so difficult and delicious. 
I think I am gonna take your advice and add some sour cream as well, mostly because I have a little bit of it left. 
Can't wait to make this and tell you how it went.

I just made this meal for dinner, and it is absolutely delicious.  I followed the directions and got perfect results! Thanks so much for sharing.

I’m from New Orleans and this recipe filled my homesick void! So easy and delicious!!! Full of flavor! I used a whole small onion in recipe. Served over quinoa and topped with green onions. 100% awesome. 
P.s. next time I will also add shrimp!!

Flavor was super yummy. Loved how quickly it came together. I added water to the Instant Pot based on prior comments about the “burn warning”. I think I must have added too much though because it got pretty watery. And I also agree with other comments that chicken wasn’t the best texture. A little “rubbery” for sure. Apart from this couple things I would change for the future I would call this dish a winner!
