Step 1

Clear and clean a flat workspace in your kitchen, and sprinkle flour on the surface of the counter.

Step 2

Pile your all-purpose flour into a large mound on the kitchen top.

Step 3

Add a sprinkling of salt and use your fingers to push open a small well in the center of the mound.

Step 4

Crack your eggs into the middle, and add in the egg yolks.

Step 5

Slowly, and gently, beat the eggs using a fork.

Step 6

Gently combine the egg mixture and the flour by folding the flour into the center of the well.

Step 7

Keep doing this until everything has mixed together, and you have a large ball of dough.

Step 8

Continually knead the ball of dough until it's smooth.

Step 9

Add more flour if it's too sticky. Add water if it's too dry.

Step 10

Keep kneading for 10 min.

Then wrap your ball of dough in plastic cling film and allow it to sit on the side for 30 min.

Using the pasta maker, flatten out the dough and shape it into long, thin sheets.

When you have the desired shape and thickness, divide the long strips of dough into 9 equal-sized sheets.

Bring a large pan of water to boil on the stove.

Add in each pasta sheet to cook for just 30 sec.

Once cooked, immediately place in ice-cold water.

Repeat until all of your pasta sheets are cooked.

Follow the instructions as listed on the box, cook the lasagna sheets accordingly, and set aside.

Preheat your oven to 370°F and prepare a 13x9 casserole dish or any kind of oven-safe dish.

Brown your beef and pork sausage in a large skillet over medium heat.

When the meat is thoroughly cooked, stir in the tomato sauce and tomato paste.

Continue stirring as you add the garlic, sugar, salt, pepper, and Italian herbs and seasoning.

Bring the mixture to boil, then immediately lower the heat.

Allow the sauce to simmer uncovered for 1 hr, stirring every 10 min.

While the sauce is simmering, beat the eggs together in a large mixing bowl, and add fresh parsley.

Stir in the parmesan, ricotta, and cottage cheese into the egg and parsley mixture.

Once your sauce is finished simmering, pour 1 cup of it evenly across the bottom of your baking dish.

Layer with 3 pasta sheets, 2 cups of the egg mixture, 1 cup of mozz. cheese, and 2 slices of provolone cheese.

Step 29

Continue with 3 pasta sheets, 2 cups of meat sauce, 1 cup of mozz. cheese, and the remaining egg mixture.

Step 30

Finish layering the 3 final sheets of pasta, the last of the sauce, and any leftover cheese.

Step 31

Top the lasagna off with a healthy layer of mozzarella.

Cover with a lid or foil and place it in the middle of the oven to bake for 50 min.

Step 33

After 50 min, remove the covering and bake uncovered for an additional 20 min.

Step 34

When the top of the lasagna is crispy and golden-brown, it's ready to serve!
