Make the sauce:

Mix together all the ingredients for the sauce in a bowl and stir until well-combined, then set aside.

Make the noodles:

Bring a large saucepan of water to the boil.

Once the water is boiling, place the soya bean sprouts in the water and cook for 1 minute, then remove with a slotted spoon, rinse under cold water and set aside.

Step 6

Bring the water back to the boil and cook the noodles according to the packet instructions, making sure to stir often to separate them. Strain the noodles into a colander and rinse under cold running water while gently rubbing until cold, about 1 minute.

Either mix the sauce with the noodles or pour the sauce on top of the noodles, then top with the cucumber. Place a small portion of the coleslaw mix and bean sprouts alongside of the noodles, as well as the quail egg halves. Garnish with a sprinkle of kkaesogeum and gochugaru.
