Step 1
Fry the onion for 5 minutes on medium heat with olive oil until softened in a large soup pot.
Step 2
Add in the garlic, pork and sausages and fry for a further five minutes until browned.
Step 3
Add all other ingredients except the stock and water. Fry for a few minutes.
Step 4
Add in the water and stock and bring to a boil.
Step 5
Reduce to a slow simmer and leave on the stove top for 3 hours.
Step 6
Add in the parsley and serve!
