Add the blackberries, allulose, lemon juice and water to a sauce pan and cook over medium/low heat for 8-10 minutes. The berries will start to break down and the sauce will thicken as it cooks. Using a masher or fork, mash up the blackberries.
Step 2
Sprinkle the xanthan gum over the top and whisk. Continue cooking for another 2 minutes, then remove from the stove and allow it to cool. Remember that it will thicken as it cools.
Step 3
Allow to cool before serving. If you prefer a smooth sauce, you can blend it in a food processor, until you get your desired consistency. Store in an airtight jar in the fridge for 5-7 days or freeze.
