Preheat the oven to 400F. In a large size casserole dish lay your chicken thighs on the bottom and season generously with salt and pepper.

Next with a basting brush or spoon, coat the tops of the chicken thighs with dijon mustard. Now layer on the sliced ham and then swiss cheese. Finish off by sprinkiling a generous coating of pork rinds over top.
Step 3
Bake in the oven for 25 minutes. The pork rinds will be toasty and the chicken cooked to an internal temperature of 165F.
