Step 1
Slice the bacon into small pieces and cook in a large pan on medium heat until crispy. Remove and set aside.
Step 2
In the same pan, turn the heat up to medium-high and add diced celery, the whites of the green onion and white onion. Sauté until onions are translucent but still have a bite. Add in chopped kimchi and grated garlic and sauté for another 3 minutes.
Step 3
Add in rice and stir to break up and combine with the ingredients. Add back in bacon and begin to add your sauces.
Step 4
For the sauces, there isn't an exact measurement, I usually start with a few tablespoons of soy sauce, oyster sauce and hoisin and then season to taste with the rest! It's all up to you :)
Step 5
Add in the green parts of the green onion to garnish, mix and serve. Top with crispy shallots, a fried egg, black sesame seeds and extra kimchi!
