Step 1
1 Cook pasta according to package directions. While the pasta cooks, beat the egg and Parmesan cheese together. Once the pasta is drained (reserve 1/2 cup of the starchy water) add to the hot pasta to the egg/cheese mixture and stir constantly for 3 minutes - this will prevent your eggs turning into scrambled eggs. Add the pasta water as needed - I added 1/4 cup to my sauce.
Step 2
2 In a skillet, heat the grape seed oil over medium heat. Season the shrimp with salt and pepper and cook for about 3 minutes total depending on the size of your shrimp, flipping once. Set aside.
Step 3
3 Add the bacon bits to the pan and cook for 1 minute. Add in your veggies and saute for 3 minutes, I like my veggies on the crisp/tender side.
Step 4
4 Add the veggie mixture to the pasta, tossing to coat in the sauce. Again, you can add more pasta water if you want more sauce. Plate and top with cooked shrimp and dried parsley for garnish.
