Insert butterfly whisk. Place lemon juice or lime juice, caster sugar, butter and eggs into mixing bowl and cook 8 min/80°C/speed 3.
Step 2
Test to see if setting point has been reached by inserting a teaspoon; mixture should coat the back of the spoon in a thick layer. If butter is not set, cook until desired consistency/80°C/speed 3. Remove butterfly whisk.
Step 3
Transfer into sealable storage jars and allow to cool completely. Place into refrigerator until ready to use.
