Step 1

Blend the mango cubes with water until very smooth, and sweeten up with sugar.

Heat the mango base, and add half of the starch into the boiling hot mixture. Stir for 5 seconds. Turn off the fire and mix in the other half. If you are using a pan witha large pan, you can add the starch one time.

Step 3

Knead into a smooth dough, add more starch if you feel it is sticky.

Step 4

Now you can choose to cut the strips into small squares or use your hand to pinch a small portion out. Shape it a round shape. You can keep the square shape if you really don’t want to spend time shaping the pearls. Only shape influences, no taste difference.

Step 5

Dust the mango boba pearls after shaping to avoid sticky.

Step 6

You can freeze the boba pearls after dusting or cook them right now.

Step 7

On stove: bring a large pot of water to a boil and then add the boba pearls. Heat over the high-middle fire and cook for around 10 minutes until the boba peel floats on the surface. Turn off the heat, cover the lid, and let it stay for another 10 minutes. For larger boba pearls, cook 20 minutes and set aside for another 20 minutes.

Step 8

Insant pot method: Add boba peals and water to the pot.  Secure the lid and close the vent. Set the Instant Pot to manual, high pressure for 5 minutes.

Step 9

Rinse the boba pearls under cold water or soak them. This helps to remove any excess starch from the pearls. Then mix in syrup or honey.
