First make the lemon-dill vinaigrette. Put the lemon juice, olive oil, dill, garlic, salt and pepper in a bowl. Whisk and put aside.

In a medium-sized heavy pot sauté the couscous in the 2 tbsp olive oil until golden brown. Add 3 cups of boiling water (or the amount instructed on the package), and cook according to package. When done, drain and set aside to cool.
Step 4
In a large bowl combine the remaining ingredients except for the basil and feta. Then add the couscous and the basil and mix together gently.
Step 5
Quickly whisk the lemon-dill vinaigrette and add it to the couscous salad. Gently mix to combine. Taste and adjust salt as needed.
Step 6
Finally, add in the feta cheese. Garnish with more fresh basil. Enjoy!
