Preheat Oven:Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare Vegetables:In a large mixing bowl, combine the zucchini, yellow squash, bell peppers, red onion, cherry tomatoes, and minced garlic.
