Step 1

Preheat oven to 400 F.

Step 2

Grease four 6-ounce ramekins and set aside.

Step 3

In a double boiler, melt dark chocolate, butter and date sugar.

Step 4

Once melted, add in vanilla extract.

Step 5

Remove chocolate mixture from heat and whisk in eggs, cassava flour and baking powder.

Step 6

Pour even amounts of the mixture into the greased ramekins.

Step 7

Bake the molten lava cakes for 10 minutes.

Step 8

Remove from oven and serve hot.
