Step 1

In a Reduction Pan, melt the butter and chocolate chips together, ensuring the chocolate is thoroughly melted and mixed with the butter.

In a separate bowl, combine the cake flour, cocoa powder, baking powder, and a pinch of salt.

Step 3

In another mixing bowl, combining the whole eggs, one egg yolk, and sugar. Add 1 teaspoon of vanilla extract.

Mix well to create a little bit of air in the mixture.  Gradually add the melted chocolate and butter mixture to the egg mixture, tempering it to avoid cooking the eggs.

Gently fold in the dry ingredients (flour mixture) to the wet mixture. Be careful not to over mix.

Stir in the chopped walnuts, followed by the chopped Heath bar pieces and the 90% cocoa powder.

Spread the brownie mixture evenly in the pan and add the remaining 2 ounces of the chocolate.

Bake in the Oven for about 20-25 minutes.

Allow the brownies to cool for at least 45 minutes to 2 hours before cutting to ensure they set properly.

For an extra touch, sprinkle a little powdered sugar on top.
