Add the chocolate, shortening and peppermint oil to a crock pot.

Melt on lowest setting, uncovered. You don't want any moisture or water

in your chocolate. This will ruin the melting process.

The melting time will vary due to slow cooker settings. Mine took approx. two hours..
Step 5
Stirring occasionally until smooth and thin. If you feel your chocolate isn't thin enough
Step 6
for dipping, add additional shortening 1/2 teaspoon at a time until desired consistency is reached.
Step 7
When chocolate is ready, dip your crackers, until coated on all sides. I use a fork and a rubber spatula to coat on tops and bottoms.
Step 8
Place cookies on parchment paper. If you put them on a plate, they will stick. Parchment paper is a must!
Step 9
Immediately sprinkle with decorations if desired.
Step 10
Let Chocolate Peppermint Cookies harden. Eat and enjoy!
Step 11
Mine were hard and ready to eat after 10 minutes.
