Step 1
In a food processor mix all the pie crust coating ingredients. Pulse until a coarse, grainy flour forms. Pour pie crust coating mixture into a bowl and set aside.
Step 2
In the food processor add all the key lime pie bite ingredients, and pulse until a thick and creamy nut butter or hummus like texture forms.
Step 3
Grease or oil a candy mold or ice cube tray. Fill the mold tray with the creamy key lime pie mixture.
Step 4
Freeze the candy molds with key lime pie mixture for 35 to 45 minutes, or until solid and firm.
Step 5
Remove key lime pie bites from mold, and roll them in the pie crust coating in the bowl.
Step 6
Keep these and store in the freezer in a container, as they don’t get hard frozen and stay firm but creamy even if in the freezer for days.
