Step 1
Heat a large pan over medium-high heat. Add oil and mushrooms to pan. Sauté 4 to 5 minutes, to a light brown color.
Step 2
Push mushrooms to the side and add meatballs. Brown on all sides, about 10 minutes.
Step 3
Add sauce and bring to a simmer, about 3 to 4 minutes. Add pasta and stir to combine. Cover and simmer 14 to 17 minutes or until pasta is tender firm.
Step 4
Stir greens through pasta, just to wilt. Serve immediately. Optional: Top with Parmesan cheese if desired.
