Step 1
Heat a little oil in a frypan, and cook chicken until done. Set aside.

Heat olive oil in a large frypan.
Step 3
Add garlic and onion and cook until browned.
Step 4
Add red and green capsicums, cooking for 3 minutes.
Step 5
Add tomatoes and red chili. Cook 5 minutes.
Step 6
Add rice, counting how many ladles, then add twice as many ladles of chicken stock or water.

Season, then bring to boil, but do not stir. Reduce heat, cover and simmer for 15 minutes.
Step 8
Add frozen peas, prawns and cooked chicken, and cook for approximately 10-12 minutes or until moisture is all absorbed.
Step 9
Turn off heat, cover with foil and rest 5 minutes before serving. Garnish with fresh parsley.
