Step 1
Start by chopping your apples into small pieces. Place in a pot on the stove, along with the water and lemon juice. Cook on low heat until apples are soft. Note: make sure to keep an eye on them and stir frequently to keep them from burning or sticking.
Step 2
While the apples are cooking, place ALL of your crust ingredients into a food processor and blend until no large nut chunks are noticeable. Press the crust into the bottom of paper muffin liners.
Step 3
When the apples are done cooking, if there is a lot of excess liquid left, drain. If you have beef gelatin available (not sponsored, but I love using Vital Proteins!), add the 1/2 tsp and quickly stir so it doesn’t clump. If you do not have been gelatin, ignore that step.
Step 4
Then, in a small bowl, mix the apples with the honey and cinnamon.
Step 5
Place the apple mixture on top of each crust and place in the freezer for about 30 minutes.
Step 6
Take out and enjoy! Store in an airtight container in the freezer or fridge.
