Step 1
Follow the instructions in our previous recipe (linked in the ingredients above) to make the poached pears.
Step 2
Use one poached pear, chopped in cubes, per cocktail glass. Use around 1 1/4 cups (300ml) of poached pear liquid per cocktail glass.Using a ladle, transfer the poached pear liquid into a pan. Add the agar agar and bring it to a soft boil, then, mixing continuously, simmer for about 3 minutes.
Step 3
Transfer the chopped poached pears to a cocktail glass. Gently fill the glass with the hot spiced liquid. Add a slice of orange as decoration. Let it cool slightly on the counter, then refrigerate it for about 5 hours or overnight. Serve chilled directly from the fridge.
