Mash the bananas with a fork on a cutting board or in a bowl.

Place the eggs in a large bowl and whisk them. Add the mashed banana, crushed pineapple, flour, and salt. Stir to combine.

Heat a tablespoon of avocado oil in a large skillet over medium heat. Drop the batter into the skillet in 2 to 3 tablespoon portions. Cook the fritters until they’re lightly browned (2 to 3 minutes), then flip and cook for another two minutes on the other side. Remove the fritters to an oven-safe dish, and keep them warm in the oven while cooking the remaining batter in batches. Serve warm. (Yields 12 fritters)
