Step 1
Chop your pastry up slightly, leave this aside.
Step 2
Place a pan onto medium heat and add the butter. Let this melt.

Add your pastry into this and cook until it all turns a deep golden brown colour. Take this off the heat and add it into a bowl.

Add the pistachio cream into this and mix until combined.
Step 5
Place this in your freezer for about 10 minutes, you just want it to set up enough so we can roll it into balls.

After it has set up, get about a 1/2 tablespoon of the filling and roll this into a ball. Keep repeating until you have 8-10 balls of the filling.

Leave these in your freezer whiles we make the cookie dough.

In a large bowl, add the cold butter, both sugars and the vanilla extract. Beat these together for 5 minutes.

Add the egg and egg yolk into this, mix until combined.

In a separate bowl, mix together the flour, corn flour, baking powder and salt. Add this into your other bowl and mix until a dough forms.
Step 11
Now add the chopped chocolate and mix until combined.

Get a 80g piece of the dough and flatten this out, add a piece of your frozen filling to the centre, then roll this into a ball. Make sure that the filling is fully covered with the cookie dough.
Step 13
Repeat until you have used all of the cookie dough.

Leave these cookie dough balls in your freezer for at least 1 hour.

About 10 minutes before you are ready to bake your cookies, pre-heat your oven to 180c.

Line 2 large baking trays with baking paper and add your frozen cookie dough balls onto these. Make sure to leave gaps between them so they have room to spread.

Bake at 180c for about 20-25 minutes.

Once baked, leave them on the tray to set up for about 15 minutes. Then they are done, enjoy!
