Step 1
Preheat oven to 180°C. Line an oven tray with baking paper.

Using a serrated knife, cut loaf crossways, 2cm (¾in) apart and only cutting three-quarters of the way through. Place loaf on lined tray.
Step 3
Combine semi-dried tomatoes, olives, basil, oil and garlic in a bowl. Season to taste. Push tomato mixture and mozzarella evenly into each cut.
Step 4
Bake loaf for 15 minutes or until cheese is melted and bread is golden and crisp.
