Step 1
Preheat the oven to 350°F. Lightly spray a 12 cup muffin tin with non-stick spray and set aside.
Step 2
Divide the prepared pizza dough into 12 pieces, and then cut each of those 12 pieces into 6 small balls.
Step 3
Place 3 small dough pieces into the bottom of each of the muffin cups.
Step 4
Top with 1 teaspoon pizza sauce, 2-3 pieces of pepperoni, and 1-2 tablespoons shredded cheese.
Step 5
Repeat with another three balls of pizza dough, sauce, pepperoni and top with more cheese.
Step 6
Cover with a clean tea towel and allow the pizza dough to puff up slightly, about 15-20 minutes. Bake for 20-25 minutes or until the cheese is bubbling and the pizza dough is lightly browned and cooked through.
Step 7
Let the muffins cool for about 5 minutes in the muffin tin, and then carefully remove them to a wire rack. Serve warm.
