Step 1
Heat oil in a wok and add mustard seeds and curry leafs and let it splutter.

Now add minced ginger garlic and chopped onions and saute it till the raw smell goes off.

Add green chilies, peas and the spices and mix all together and fry for few minutes.

Now add boiled and mashed potatoes and mix nicely with a spatula such that the flavors incorporate well.

Fry for another few minutes till the spices and the potatoes mix well properly.

Add fresh chopped coriander and mix well again. Turn off the gas and let the filling cool.

Rub oil in the flour. Add ajwain, salt and water and knead into a smooth dough.

Cover the dough and keep aside for 15 mins.

Divide the dough into 10 equal portions. Roll out each portion into about 6 inch wide diameter.

Cut in half and make a cone and fill in the potato filling.

Seal the edges by applying little water.

Similarly make rest of the samosas and place them on a tray.

Pre heat the Airfryer for 5 mins at 180 degree C.

Brush the samosas with oil and sprinkle little sesame seeds on top.
Step 15
Arrange the samosas in the air fryer and cook at the same temperature for 15-18 mins or until golden brown in color.
Step 16
Serve hot with tangy mint and coriander dip and tamarind chutney.
