Quick Chicken and Dumplings

butter

prechopped onion

chicken breasts

(10-ounce) box frozen mixed vegetables, thawed

water

all-purpose flour

chicken broth

salt

black pepper

bay leaf

(6-inch) flour tortillas,

parsley

Melt butter in a large saucepan over medium-high heat. Add onion; saut&eacute; 5 minutes or until tender. Stir in chicken and vegetables; cook 3 minutes or until thoroughly heated, stirring constantly.


While chicken mixture cooks, combine water, flour, and broth. Gradually stir broth mixture into chicken mixture. Stir in salt, pepper, and bay leaf; bring to a boil. Reduce heat, and simmer 3 minutes. Stir in tortilla strips, and cook 2 minutes or until tortilla strips soften. Remove from heat; stir in parsley. Discard bay leaf. Serve immediately.


You should be ashamed. Calling tortillas dumplings. My granny would come back from the dead and smack me with a cast iron skillet if she saw me doing this

3 1/2 stars.  Nothing fancy here, just a quick and easy weeknight soup that everyone enjoys.  I took Boston's suggestion and quickly fried the tortilla strips in some olive oil, sprinkled a pinch of kosher salt top, and then added the soup on top of the strips.  Really good.  Sliced garden tomatoes and some avocado cubes were a quick side.  Will make again.

This is NOT chicken and dumplings for a North East US gal.  This is a chicken soup.  Dumplings are those heavenly little pillows all puffed up and yummy. . .veggies are on the side as an accompaniment.  As a soup it has potential, but needs a LOT of work.  As "chicken and dumplings" as a main dish a total failure.

Use the tortilla strips after they have been been quickly "fried" in light olive oil until just crunchy. Then place them in the bottom of the bowls and ladle the soup over them.

Easy...loved it.  Used multi grain torts for some extra nutrients.  Cleaned out the freezer by using those half full bags of random veggies.

This worked well, but left out the onions.

Tortillas are made of flour and water just like dumplings.  They work great especially since the name of this recipe starts with "Quick".

I have made this recipe for many years.  My secret ingredient is coriander, and I don't use the bay leaf - just sprinkle in about 1/4 teaspoon before you add the tortilla strips.  Please do cook the tortillas long enough for them to puff up and have the texture of hand made dumplings. Give it a try.  We country folk really like this one.

Great and easy recipe.  Very fast and tasty.  Will definitely make again and again.  My seven-year-old daughter, who dislikes anything in the vegetable category, loved it and asked if we could have it again for leftovers.

Although I'm not quite sure I can say that the tortilla strips are a substitute for dumplings, I thought the soup was delicious.  To save time, I used rotisserie chicken.

I have made a similar receipt using flour tortillas. In these instructions it tell you to cook the tortillas strips for 2 minutes. I can understand why so many reviews are so negative. After cooking the tortillas you have to set your pot off the burner and cover for 15 minutes so the tortillas will puff up and make a good dumpling.

Do yourself a favor and use canned biscuits for a quick substitute for dumplings.  Just cut raw dough into quarters and drop in.   Only takes a few minutes to cook and make a much better substitute for dumplings than tortilla strips!

This name is deceiving. It should be Quick Chicken and Tortilla Strips. My kids love dumplings and would never accept tortilla strips as a substitute. I would, but am upset with the false name of the recipe.

In one word -- yuck.  Tasted awful.  Tortilla strips in this dish has to be a mistake.  What a waste of food.

We used to have this at our Child Care center and staff and the  children loved this lunch! Easy and yummy, what else do you need...maybe a small salad!

While it is a decent chicken soup it bears no resemblence to chicken and dumplings unless you're a foreigner or a yankee. One good thing, my  93 yr old grandmother laughed so hard she got a stitch in her side when I told her ya'll were calling this chicken and dumplings.She agreed with me it more a chicken noodle soup with thick noodles.

This recipe really exceeded my expectations.  Simple ingredients, quick to put together, and tasty too.  The tortilla "dumplings" were great.  I will definitely make this again when I need a quick but still healthy and tasty dinner.

The idea of using the floor tortillas really worked out great.  I added celery with the onion and used homemade broth.  Added mushrooms.  Really good.

This is a good idea, great for beginner cooks, but do yourself a favor and keep a bag of  frozen dumplings from your grocer's freezer case on hand and use them instead of the tortillas.  As hard as you might try, the tortilla dumplings taste like tortillas.  There ares some really good frozen homemade- type dumplings available, and even more convenient...you don't have to cut them!

Hard to believe that tortilla strips could sub for dumplings, but it works for us.  Great flavor, no hassle, and quick to put on the table.  This is a winner recipe.
