Step 1
Prepare parsley: wash well. Shake off excess moisture and remove thick stalks. Wrap in a tea towel and place in the fridge to dry further.
Step 2
Put the quinoa into the mixing bowl and add green onions. Squeeze moisture with hand so that quinoa absorbs the onion flavor.
Step 3
Chop parsley fairly coarsely, measure and add to quinoa with mint.
Step 4
Beat olive oil with lemon juice and stir salt and pepper. Add to salad and toss well.
Step 5
(Peel and) seed tomatoes and cut into dice. Stir into salad.
Step 6
Cover and chill for at least 1 hour before serving.
Step 7
Serve in a bowl lined with crisp lettuce leaves.
Step 8
Serve the remaining lemon juice and salt mixture in a jug so that it can be added according to individual taste.
