Step 1
1 Bring meat to room temperature - for that size roast (4 pound) it took about an hour. Heat oven to 300.

2 Mix the 1 teaspoon salt, 1 teaspoon pepper and 2 tablespoons of flour and rub that mixture all over the beef.
Step 3
3 In a large oven safe skillet or pot, heat one tablespoon of grape seed oil over medium heat, and sear all sides of the beef - this will take about 10 minutes.

4 Place the 2 cups of broth in the pot. Mix the Itlian seasoning, oregano, garlic powder and oil together and spoon over the top of the beef. Using a meat thermometer, bake until it reaches an internal temp of 120 (I like my beef on the rare side). This took about an hour.
Step 5
5 Let the beef rest for 30 minutes before slicing. By now the beef broth should be cool. Mix one cup of the broth with a tablespoon of corn starch, and bring to a boil until thickened, about 3-4 minutes.
Step 6
6 Store the remaining beef broth in a mason jar for Italian beef leftovers for the dipping au jus - I add 1/2 teaspoon of crushed red pepper and an additional teaspoon of Italian seasoning to my au jus.
