Step 1
Line a large baking sheet with parchment or wax paper.
Step 2
Place 24 of the crackers on the prepared baking sheet, leaving a little space between each.

Spoon about 1/2 tablespoon of the peanut butter onto the center of each of the crackers.
Step 4
Gently press 1 of the remaining crackers onto each of the peanut butter layers to form sandwich cookies.
Step 5
In a large, microwave-safe bowl, add the chocolate chips and the coconut oil and microwave in 30-second increments, stirring between each, until it is just melted. Be careful not to overheat.
Step 6
Dip the cracker sandwiches into the chocolate, 1 at a time, and use two forks to move them around to completely cover. Lift them and allow the excess chocolate to drip off.
Step 7
Transfer the coated cookies to the prepared baking sheet and sprinkle with the sea salt.
Step 8
Let the coated cookies sit until the chocolate hardens, about 1 hour.
Step 9
Serve.
