Step 1

Preheat oven to 200°C. Lightly spray chicken with oil. Season with salt and pepper.

Step 2

Heat a non-stick frying pan over medium-high heat. Cook chicken, in 2 batches, for 2 minutes each side or until golden. Transfer to a baking tray. Roast for 7 to 8 minutes or until cooked through. Transfer to a plate. Cover. Stand for 5 minutes.

Step 3

Meanwhile, heat margarine in frying pan over medium heat. Cook onion, bacon and garlic for 4 to 5 minutes or until golden. Add peas and wine. Simmer for 2 minutes. Remove from heat. Season with salt and pepper.

Step 4

Slice chicken. Place on plates. Serve with peas, potato and lemon wedges.
