Place the beans in a large pot with 6 cups of water. Refrigerateand soak for 12 hours or overnight.

Pour 5 cups water over the beans and bring to a simmer over mediumheat. Reduce the heat to maintain a gentle simmer. Cook for 1 hour, stirringoccasionally, or until the beans are just soft. If not using the beans right away, refrigerate them in theircooking liquid in a covered container for up to 5 days.
