Place the beans in a large pot with 6 cups of water. Refrigerateand soak for 12 hours or overnight.

The next day, drain the soaked beans and rinse well. Transfer thebeans to a heavy pot or Dutch oven and add the rosemary, bay leaf, garlic andolive oil. Pour 5 cups water over the beans and bring to a simmer over mediumheat. Reduce the heat to maintain a gentle simmer. Cook for 1 hour, stirringoccasionally, or until the beans are just soft.
