Scalloped Pineapple Casserole

butter, softened

(20 ounces) crushed pineapple, well drained

lemon juice

white bread (crusts removed)

My family loves this! We make the dish exactly as the recipe states. The first time we served this as a side dish with ham, however, we decided to start serving this as a dessert, warm, with whipped cream. Thus far, we&#039;ve had rave reviews every time it&#039;s been served. Thanks for submitting the recipe.

This looks so good, could I use rye bread?

This was so awesome.  We used the pineapple in juice and yes, it was sweet, but not too sweet.  We used it as a side to salmon and cheesy potatoes, but this would be perfect with ham.

This recipe is SHAAAMAZING! My family could not get enough of it when I made it the 1st time about 6 wks ago. Since I have some overripe apples right now I decided to follow the recipe exactly but use the apples instead of the pineapple. I also sprinkled a bit of ground cinnamon on top before baking. This recipe has proven itself to be super versatile Bcz the apples are JUST as delicious in it as the pineapple was! This recipe will be on ALL of our holiday tables from now on, as well as being in heavy rotation for our family meals!! Thank you to the submitter and to TOH for publishing it!

I made this Scalloped Pineapple Casserole on Easter Sunday yesterday and it was a delicious accompaniment to the baked ham entree.  My family loved it, so I will definitely be making this again.  I baked it in a 9”x13” glass dish. By the way, 4 cups of firmly packed cubed white bread (crusts removed) equals 20 slices of bread.  A great recipe!

This is a fabulous dish to use as a side dish or dessert!!  It is a winner any way it is made. I use wheat bread because that is all I buy. The pineapple is no question because the sugar helps to sweeten the dish. I have also used fresh pineapple. Very very good!!

would whole wheat bread make a difference?  we never buy white bread

Very Good recipe. I wonder if the difference in the sweetness of the dish people experience is based on whether the crushed pineapple is in water or “juice,” which I suppose means pineapple juice. The recipe does not specify. Even drained, the pineapple would be much sweeter than that stored in water. If using pineapple stored in juice, it may be wise to reduce the sugar.

Made this today for Christmas dinner. It was absolutely delicious with ham. Used brioche bread. Will absolutely make this again. Awesome recipe!
