Step 1

Heat the oil in a large skillet over medium heat.

Step 2

Add your pepper and onion and sauté until they're soft and start to brown. This can take about 20-30 minutes.

Step 3

Add in your fajita seasoning, water, and shrimp.

Step 4

Cook the shrimp for 2 minutes, flip, and cook for 2 minutes more or until cooked through.

Step 5

To assemble your bowls add about 1/3 cup cooked rice and 1/2 cup beans to each bowl. Top with your shrimp and vegetables, and garnish with avocado and cilantro.
