Step 1

Heat the butter in a large pan or wok on a medium heat. Add the cinnamon stick and onion and fry for around 5 minutes until the onions have softened.

Step 2

Add the garlic and ginger fry for 30 seconds more.

Step 3

Add the tandoori masala and curry powder and a splash of water and fry for 30 seconds.

Step 4

Add the remaining ingredients (except crème fraiche and coriander).

Step 5

Cover and cook on low for 4 hours.

Step 6

Just before serving, stir through the crème fraiche and coriander.
