Step 1
Put a pot of water on the stove over high heat and bring to a boil. Add the glass noodles and cook according to package directions. Remove with tongs, place into a bowl, and rinse in cold water. Keep the boiling water going.

In the boiling water, quickly blanch the shredded cabbage. Remove from the water, rinse in cold water, and drain well.
Step 3
Cut the glass noodles and cabbage into 1-2 inch sections with scissors. Soak up any excess water with a clean kitchen towel or lint-free paper towel.

Mix together the ground pork, mirin, soy sauce, garlic, ginger, and green onion. Now gently mix in the cabbage and glass noodles.
Step 5
Preheat a griddle or a large skillet on the stove over medium to medium-high heat.
Step 6
Spread about a tablespoon of the filling mixture over a wrapper. Place the wrapper meat-side-down onto your cooking surface.
Step 7
Cook for 1-2 minutes.
Step 8
Lightly spray wrapper side that is facing up with avocado oil spray, or brush lightly with oil.
Step 9
Flip the dumpling over and carefully fold in half. Cook each side of the folding dumpling until they are golden brown and crispy.
Step 10
Remove and serve hot with your favorite dipping sauce.
