Step 1
Combine 1 1/2 cups water, sugar, salt, and yeast in small bowl. Let sit for about 5 minutes or until the mixture starts to foam slightly. Add melted butter.
Step 2
Place flour in the bowl of a large food processor. Place the lid on and turn it on. Gradually pour the yeasty buttered water in through the hole in the top of the food processor. Process for 2-3 minutes or until it becomes a big dough ball. (You can also do this in a standing mixer if you don’t have a food processor.)
Step 3
Lightly oil a large bowl. Add the dough to the bowl, cover with plastic wrap and let sit in a warm place for about an hour. It will double in size.
Step 4
Line 2 baking sheets with parchment paper and lightly grease them.
Step 5
Bring 10 cups of water to a boil. Add baking soda, stir to combine, and maintain a low boil.
Step 6
Preheat the oven to 450.
Step 7
Flour a work surface and remove the dough from the bowl.
Step 8
Separate the dough into 8 equal pieces and begin to form each piece into an 18” snake. Form each snake into a ‘U-shape’. Double cross the ends, flip them back over to the bottom of the ‘U’, and press the ends lightly into the middle of the ‘U’ to create a pretzel shape.
Step 9
Place pretzels, one at a time, in the boiling baking soda water for 30 seconds. Use a flat bottomed spatula to remove them from the water, and place them onto the prepared baking sheets.
Step 10
In a small bowl, whisk the egg white with 1T water. Brush each pretzel with egg wash, sprinkle with kosher salt and bake for 12-14 minutes or until nice and brown.
Step 11
Heat all ingredients over low heat in a small saucepan until smooth and warm.
Step 12
Serve with hot pretzels.
