Step 1

Have all the ingredients ready before you make the devilled beef stir-fry.

Step 2

Combine beef slices, vinegar, soy sauce, pepper in a medium-sized bowl. leave the beef to marinate for 20-30 minutes.

Step 3

Place a frying pan or wok over low-medium heat and pour in the oil.

Step 4

Once the oil heats, add the marinated beef to the oil(make sure you don’t add any leftover liquid while transferring the beef to the pan). save the marinade to use later.

Step 5

Semi-fry the beef slices while tossing them around for 10-12 minutes over medium heat until they turn brown(not too dark or crispy).

Step 6

Once brown, set the beef on kitchen towels to drain excess oil.

Step 7

Place the same pan you used to fry beef over medium heat, pour a few tablespoons of oil if necessary then add curry leaves, cinnamon, ginger, garlic, onions, tomatoes, banana peppers(malumiris). do a quick stir-fry of these ingredients for 10 minutes.

Step 8

Reduce heat, add the beef tomato sauce, sugar, chilli flakes, salt to season and pour in any left-over marinade and continue stir-frying the ingredients. 3-5 minutes.

Step 9

Continue cooking, taste and check if the seasoning is balanced and cook until the Sri Lankan beef is almost dry. 5 minutes.
