Step 1

Cook enough rice to yield 3¾ cups of cooked rice. 1 cup of dry rice will make around 2-3 cups of cooked rice depending on what kind of rice you use.

Step 2

Cut the steak, against the grain and on a slight bias, into thin strips of about ¼ inch thick. You are looking for bite sized pieces.

Step 3

Place the steak into a large bowl and add the onion powder, garlic powder, chili powder, cayenne pepper, salt, pepper, lime juice, and oil. Toss everything together so it is evenly coated. Allow it to marinade for a few minutes while you cut the vegetables.

Step 4

Preheat your air fryer to 400°F. Once at temperature add in a portion of the steak and cook for 2-3 minutes. It won't take long at all since it is cut thin and you don't want to over cook it. Cook it in batches to ensure proper cooking.

Step 5

You can also cook the steak on a skillet over high heat if you don't have an air fryer.

Step 6

Cut the onion and peppers into thin slices and the tomatoes in halves.

Step 7

In a large skillet over medium high heat, add some oil and the sweet onions. Sal early to encourage water release and browning.

Step 8

Allow the onions to develop some color then add in the peppers and lightly salt again to pull out the water. Once they have begun to soften, add in the tomatoes and cook until the tomatoes have softened and cooked out.

Step 9

Add some lime juice over the top of the vegetables and season with salt and pepper to taste.

Step 10

Mix in the steak and stir to incorporate.

Step 11

This recipe makes 5 servings. Divide your ingredients evenly into your 5 containers. Each dish gets ¾ cup of cooked rice.
