Step 1

Wrap sweet potatoes in foil.

Step 2

Drain and rinse black beans.

Step 3

Add black beans and remaining ingredients to large zipper bag. Make sure to only use the sauce from the chipotle peppers can.

Step 4

Zip to seal and squish around to mix.

Step 5

Place sweet potatoes in slow cooker and cook on low for 6-8 hours.

Step 6

Add prepped mixture to skillet on medium heat and cook for 5 minutes (until heated through).

Step 7

Unwrap sweet potatoes, and stuff with heated prepped mixture, cheese, and sour cream.

Step 8

Serve with side salad.
