Preheat your oven to 425°F (220°C).

Step 2

Rinse the chicken under cold water and pat it dry with paper towels.

Step 3

In a small bowl, combine salt, pepper, minced garlic, and olive oil. Rub this mixture all over the chicken, including under the skin.

Step 4

Stuff the cavity with halved lemons and fresh herbs.

Step 5

Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes or until it reaches an internal temperature of 165°F (74°C).

Step 6

Let the chicken rest for 10-15 minutes before carving to retain juices.
