Step 1

Prep your lobster. If you bought a whole cooked lobster, you'll have to break it down yourself. Here's a helpful tutorial. If you bought cooked lobster meat, you're already good to go. Cut lobster meat into desired size and set aside.

Step 2

Cook pasta according to package instructions. Reserve a cup of pasta water prior to draining. Set aside.

Step 3

While the pasta is cooking, add bacon to a large pan and cook over medium-high heat until it's crispy, about 5-6 minutes. When it's done, remove it from the pan and sop up the bacon grease with a paper towel.

Step 4

Turn heat down to medium-low and add 2 tablespoons of the butter, garlic, thyme, red pepper flakes, and corn to the pan. Let the corn cook for about 5 minutes or until it has a slight char, stirring occasionally.

Step 5

Once corn has a slight char, add cream, salt, and black pepper to the pan and let it simmer and thicken for 2-3 minutes, then gradually add shredded gruyere and parmesan. Cook until the cheese is melted, about 1-2 minutes, then add half a cup of pasta water and let the sauce re-thicken.

Step 6

Meanwhile, melt remaining 1 tablespoon of butter in a pan and add lobster meat for about 1 minute, or until warm. The lobster is already cooked, so you only want to leave on heat as long as it takes to get it warm.

Step 7

Add cooked pasta to the pan with sauce. Stir to combine, then add bacon and lobster. If your noodles are too dry or you need more sauce, add a touch more pasta water and stir again. Remove from heat and serve.
