Step 1

Add Dijon mustard, vegan sour cream (or mayo) and maple syrup to a small bowl. Use a whisk to combine well until no clumps remain.

Step 2

Taste and adjust flavors if desired.  For a stronger, spicier flavor, add more dijon mustard.  For a more mild, creamy version, add more vegan sour cream (or mayo).  For a sweeter sauce, add more maple syrup.  A pinch of salt is optional but helps to bring out all the flavors.  If using, whisk in the salt here.

Step 3

Use immediately or store in a small airtight container for up to two weeks. Refresh before using by whisking again.
