Grease a large bowl and set aside.
Step 2
Place water, milk, yeast, butter and sugar into mixing bowl and heat 2 min/37°C/speed 1.

Add flour and salt and mix 10 sec/speed 4, then knead Dough /5 min. Place in the greased bowl and leave to prove in a warm place until doubled in size (approx. 1 hour). Clean and dry mixing bowl.
Step 4
Line a baking tray (30 x 40 cm) and set aside. Place dough on a silicone bread mat or lightly floured work surface and divide into 8 equal pieces. Roll each piece into a smooth tight ball and place on prepared baking tray. Cover with a tea towel and set aside in a warm place for 30 minutes to prove for a second time. Continue with topping.
Step 5
Place all topping ingredients into mixing bowl and mix 10 sec/speed 3. Scrape down base and sides of mixing bowl with spatula. Set mixture aside in mixing bowl for 20 minutes. Meanwhile, preheat oven to 200°C.
Step 6
Gently brush the tops of proved rolls with a generous layer of topping, then set aside for 10 minutes. Bake for 20-25 minutes (200°C), until golden brown and crisp. Transfer to a wire rack to cool before serving as desired.
