Step 1
Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper and set aside.
Step 2
In a large bowl, beat the softened butter and brown sugar with an electric mixer until light and fluffy, about 2-3 minutes. Beat in the egg yolk and vanilla extract until combined.
Step 3
Add the flour and salt and stir by hand with a spatula until just combined. The dough will be crumbly.
Step 4
Press the dough evenly into the prepared pan. Bake for 20-25 minutes or until the edges are lightly golden brown.
Step 5
Optional caramel filling: In a microwave-safe bowl, combine the caramel candies and heavy cream. Microwave in 30-second intervals, stirring between each spin, until the caramels are melted and the mixture is smooth (about 1-2 minutes total).
Step 6
Remove the crust from the oven and immediately pour the caramel sauce over the hot crust, using an offset spatula to spread it evenly.
Step 7
Alternatively, immediately sprinkle the chocolate chips over the hot crust. Let stand for 3-5 minutes, then use an offset spatula to spread the melted chips into an even layer.
Step 8
Sprinkle the toffee bits and chopped pecans (if using) over the melted chocolate and set aside to cool.
Step 9
When the chocolate is set and the bars have cooled, cut into squares and enjoy! For clean cuts, refrigerate the bars for 30 minutes before slicing. Serve and enjoy!
