Seek out several varieties of heirloom tomatoes for this simple salad. Sweeter and juicier than conventional tomatoes, they add the perfect pop of color.

Tomato Salad with Lemon-Basil Vinaigrette

basil,

lemon juice

olive oil

Dijon mustard

salt

⅛ teaspoon ground pepper

firm multicolor heirloom tomatoes, sliced

English cucumbers,

feta cheese

Whisk basil, lemon juice, oil, mustard, salt and pepper in a large bowl. Arrange tomatoes and cucumbers in a serving dish. Drizzle with dressing, sprinkle with feta and top with basil, if desired.


This is absolutely a delicious salad. The dressing is light and extremely tasty

Delicious!  I was a little timid of the dressing from the review prior.  I tasted it and didn't like the dressing on its own, but took a leap of faith and poured it on.  It marries all the ingredients together.  Give it a try.

This was an outstanding salad. I would make this many times over. It's worth getting the good tomatoes and a quality feta!

We weren't fans of the dressing (we think it was the mustard) on this salad so I'm glad that I served the dressing as a side at the table instead of dressing the salad. When each of us took seconds we all preferred just a drizzle of olive oil over the salad. But it was a great way to get a different kind of salad onto the table and we loved the tomato cucumber feta and basil combination! This was healthier and less fussy than serving a more traditional caprese.

So yummy. Make a batch of dressing and give to a neighbor!!
