Step 1
Place a bowl onto mixing bowl lid and weigh cashews into it. Add salt, cover with water and set aside to soak for 3-6 hours (see Tips).
Step 2
Using simmering basket, drain and rinse cashews.
Step 3
Place lecithin granules and boiling water into a small bowl and set aside for 30 minutes.
Step 4
Place coconut oil into mixing bowl and heat 2 min/37°C/speed 2.
Step 5
Add all remaining ingredients, including drained cashews and soaked lecithin, then blend 1 min/speed 10 or until completely smooth. Spoon into an airtight container and place in the fridge to set (approx. 2 hours). Use as desired (see Tips).
