Step 1
Preheat oven to 375°F. Grease wells of a ½ cup muffin tin (or line with paper liners).
Step 2
Wash, dry, and chop the strawberries in half, quarters, or smaller, depending on size of each berry.
Step 3
In a large bowl, combine the wet ingredients - banana, maple syrup and oil. Whisk until smooth.
Step 4
Add in the oat milk and vanilla extract.
Step 5
Stir in the flour, baking powder, and salt until just mixed. Do not over stir the mixture!
Step 6
Fold in the strawberries very gently.
Step 7
Fill the greased muffin tins to 1/2" below the top.
Step 8
Bake for 25-30 minutes until a skewer inserted comes out clean.
Step 9
Allow to cool for at least 10 minutes before removing from muffin pan.
