Step 1

Heat butter in a large frying pan and gently cook finely chopped onion, cauliflower florets, potatoes and carrot (chopped into cubes) until potato is just tender.

Step 2

Add spices and seasoning to the pan and stir to coat the vegetables, cook a further minute until fragrant, then remove pan from the heat.

Step 3

Mix vegetables and flour in a large bowl, whisk eggs until fluffy, then combine with the vegetable mixture.

Step 4

Heat oil in a large frying pan over medium heat. Add ¼ cup measures of the mixture to the pan and cook in batches for 2 to 3 minutes each side or until golden and cooked through. Serve fritters with yoghurt or chutney.
