Cassava cake with macapuno is a traditional Filipino dessert made of grated cassava, coconut milk, condensed milk and macapuno.

Filipino Cassava Cake with Macapuno

16-oz packs frozen grated cassava (thawed)

coconut milk

condensed milk (divided)

tbsp brown sugar

unsalted butter (softened)

salt

Preheat

Preheat oven to 350F. Grease a 9x13 inch baking dish and set aside.

Stir

In a large bowl, stir all ingredients - but only half of the condensed milk - until combined. Smush the softened butter to the sides of the bowl to make sure it is incorporated.

Bake

Pour the batter into your prepared dish and bake for about 1 hour or until the edges start turning puffy and golden brown and the centre is set. It&#039;s okay if the top of your cake is still bubbling.

Spread

Carefully remove the cake from the oven - keep the oven on - and spread the rest of the condensed milk on top. Try to spread it as evenly as you can.

Broil

Continue to bake your cassava cake until the top is caramelized. You can also choose to broil on low for a few minutes to help with the caramelization. Just remember to watch your cake because broiling can easily burn it.

Cool

Remove from oven and allow to cool in baking dish before cutting into squares and serving. Best served warm.

Pumpkin Mochi

unsalted butter

sugar

eggs (room temperature)

tsp pumpkin spice

flour rice

tsp baking powder

evaporated milk

oz pumpkin puree

Preheat your oven to 350F. Line a 9x13 inch baking pan with parchment paper and set aside.

In a large bowl, stir melted butter and sugar until combined.

Incorporate

Add eggs one at a time. Ensure each addition is incorporated well.

Add mochiko, baking powder and pumpkin spice. Stir until about 80-90% combined.

Add evaporated milk and pumpkin puree. Stir until incorporated. Ensure your batter is perfectly smooth and has no lumps.

Transfer the batter to your prepared pan and bake for 30 minutes or until a tester inserted in the center comes out clean.

Remove from oven, allow to cool completely in the pan, chill for 1-2 hours in the fridge, then slice into bars.

Add ube extract and stir until evenly blended.

Transfer the batter to your prepared pan and bake for 45 minutes or until a tester inserted in the center comes out with minimal dry crumbs.

Love this recipe! So simple and good. I disagree with the other comments about reducing the ube extract. I found 2 tablespoons to be perfect!

This was delicious and so easy to make! Planning to make again. Definitely a keeper.

I made this tonight, and the color of the mochi was very dark, almost looks like brownie, not deep purple.  To bring out that velvety purple, I think the Ube flavor should be reduced to 1 tablespoon instead of the suggested 2 tablespoons.  Also, it tasted okay, could use a bit more sweetness.
