1 pot recipe

This baked oatmeal is sweet and comforting. It&#039;s vegan, healthy and gluten-free! Loaded with chocolate chips, mashed banana and peanut butter. Feeds a crowd and can be meal prepped to enjoy through the week.

Chocolate Chip Banana Baked Oatmeal

oats

tbsp ground flax

tsp baking powder

cinnamon

tsp fine sea salt

bananas (, mashed (3/4 cup mashed))

tsp pure vanilla extract

almond milk

maple syrup

peanut butter

semi-sweet chocolate chips ((vegan))

Preheat oven to 375F/190C. In a rectangular 8x11-inch baking dish, add the oats, ground flax, baking powder, cinnamon, and salt. Mix together.

Add the wet ingredients: mashed banana, vanilla, almond milk, maple syrup and peanut butter. Whisk with a fork to combine everything.

Sprinkle with chocolate chips and bake for 25 to 30 minutes, until the edges are lightly brown and the mixture is set. Let cool for 10 minutes before cutting into slices and serving, or allow to cool completely. Optional to drizzle with more peanut butter and sliced banana for serving.

4 Easy Baked Oatmeal Recipes! Vegan and Healthy -Vegan Afternoon with Two Spoons

This Vegan Potato Leek soup is creamy, comforting and adored by all eaters, vegan or not. It&#039;s healthy, vegan and gluten-free. Simply made in one pot and just 10 ingredients. A perfect soup for lunch or a light dinner.

Vegan Potato Leek Soup

olive oil (more

garlic

leeks (white and light green parts only, chopped)

celery (chopped)

vegetable broth (more if desired)

potatoes

raw cashews

bay leaves

tsp herbes de Provence ((or fresh thyme leaves))

tsp sea salt

tsp coriander

tsp ground pepper

In a large pot add the olive oil and garlic and bring to medium heat. Toss in the leeks and celery and cook, stirring often, until wilted (about 5 minutes).

Pour in the vegetable broth and add the potatoes, cashews, bay leaves, herbes de Provence, salt, coriander and pepper. Bring the soup to a simmer by increasing the heat. Cover with the lid slightly ajar and cook until the potatoes are soft and tender, about 15 minutes.

Scoop out the bay leaves and discard. Puree the soup with an immersion blender until creamy smooth. (Alternatively, blend the soup in a blender in batches on high speed).

Serve the soup in bowls with a drizzle of olive oil. We like to serve alongside bread, toasted and slathered with vegan butter!

No cook vegan overnight steel cut oats! Made with almond milk. This overnight steel cut oats recipe is easier to make than traditional oatmeal. Prepare the recipe and let it soak overnight. Come morning you have a deliciously soft and chewy oatmeal.

Vegan Overnight Steel Cut Oats (no cook!)

tbsp chia seeds

sea salt

In a medium mixing bowl (microwave safe) add the almond milk, maple syrup and peanut butter. Whisk to combine. Pour in the still cut oats, chia seeds, cinnamon and a pinch of sea salt. Whisk again.

Microwave the mixture for 2 minutes, stir again. Cover and refrigerate the oat mixture until thickened to an oatmeal consistency (6 to 12 hours). When ready to eat, serve in bowls and add your favourite toppings. (I used banana, blackberries, peanut butter and coconut flakes).

Overnight Steel Cut Oats Recipe

This soup is creamy, velvety and luxurious, with lots of mushroom chunks! It&#039;s a simple soup recipe that&#039;s so gourmet.

Vegan Cream of Mushroom Soup

olive oil

sweet onion (finely chopped)

garlic (finely chopped)

lb cremini mushrooms (sliced)

all-purpose flour

vegetable broth

thyme (tied with twine)

tsp pepper

tbsp miso (white

In a small bowl and the cashews and pour in boiling water to soak. Set aside.

In a large pot, add the olive oil, onion and garlic and bring to medium-high heat. Cook, stirring often until the onions have softened, about 7 minutes).

Add the mushrooms and cook for 5 to 7 minutes, then sprinkle in the flour and mix together. Cook for 2 minutes, then  pour in 1/2 cup of the vegetable broth and bring to a low simmer. Toss in the thyme, bay leaves, salt and pepper. Simmer the soup for 5 minutes, then pour in the remaining broth. Cover and let the soup simmer for 10 to 15 minutes.

Meanwhile, make the cashew cream: strain the cashews and add to a high speed blender with the miso and 3/4 cup of fresh water. Blend until smooth and creamy.

Turn the heat to low and pour the cashew cream into the soup. Stir everything to combine. Scoop out the thyme and bay leaf and serve.
